How do I make spicy tuna like at sushi restaurants? I'm a spicy tuna addict would be much cheaper if I just made it at home, then I wouldn't have to eat all that rice either. I would also like to find soy paper. ~~~ Miss Emily1 ~~~

I finally tracked down a little fish market that could get me sushi-grade tuna. The best thing to do is just call around and ask. And if you have a grocery store that sells sushi, but not sushi grade fish, ask for the name of the person who makes their sushi, and then speak with them. It takes some tracking down sometimes, but it's worth it!! This is the recipe that i use to make them at home... INGREDIENTS: * 4 cups sushi rice * 4 sheets of nori (dried seaweed) * 1 tbsp sesame seed * 1/2 pound fresh raw tuna * 1 tbsp mayonnaise * 1/2 tsp togarashi (Japanese hot pepper) PREPARATION: Chop tuna and mix with mayonnaise and togarashi. Put a nori sheet on top of a bamboo mat (makisu). Spread sushi rice on top of the nori sheet. Sprinkle sesame seed on top of the sushi rice. Place the tuna mixture lengthwise on the rice. Roll up the bamboo mat, pressing forward to shape the sushi into a cylinder. Press the bamboo mat firmly and remove it from the sushi. Cut the rolled sushi into bite-sized pieces. Makes 4 rolls

Answer 1It really depends where you live and how close to the coast you are. If you're not near a marina where tuna boats come in daily or frequently, you're not going to find a store that sell sushi grade. They might claim that it is, but I wouldn't eat it.
Answer 2check for an asian or japanese grocery in your area. I have to travel a bit out of the way.. but thats where I get my supplies. Although one of the local larger groceries does carry frozen sushi grade tuna. The people at the japanese grocery are very helpfull when i ask about making anything. They also sell sushi cook books, check your library too.
