the eggs are just pressure cooked, which congeals the protein faster, and thus a bit stickier, than usual. they're real eggs, they just don't prepare the the conventional way. that being said, they are still rubbery.

Are you talking about their 'muffin' or 'biscuit' sandwiches? If the muffin, they use real eggs (ones that you crack and then fry). If the biscuit, then they use a premix egg mixture. No specialty to it. They may be rubbery if they sit for a while before you get them.

I worked at McDonalds and they use real eggs, it's just that a ring is used and a cover is put over them to get them to stay together. No big trick, your's was probably just overdone.

the trick is the old "lazy" dinner poaching methed you would put a egg on a hot griddle add a splash of water andcover til done to soft or hard mc ds added the rirg i think to save griddle space and lets them cook to hard unfortintly now mico or true poching is the norm i still use the griddle way but i havent seen it anywhere in years
