that onion will produce flowers and seeds... past the bulbing/eating stage... sorry, but they are beautiful flowers buy some onion sets, plant them during the proper growing season in your area after planted and growing, you can pick and use any time.. and even the tender green tops.. like chives yes, you do have to dry them if you want to store them for more than a week.. to prevent fungus/rot... but you can use#92;eat them during any part of the time... drying is only because if you try to store a bunch of them for a long time, they're too moist, they'll rot... just like potatoes, yams, etc.
