I have recently purchased the 3rd gen nano. I have converted many videos, and i have seen videos that say you can just drag and drop the video onto the video folder, but it will not let me. Any tips?

You have to set your iPod to "Manually manager music and video", or else you can not drag and drop the video to iPod Nano.
More over, make sure your video is comptiable with iPod Nano:
MPEG-4 video, up to Mbps, 640 by 480 pixels, 30 frames per second, Simple Profile with AAC-LC audio up to 160 Kbps, 48kHz, stereo audio in .m4v, .mp4, and .mov file formats
