Hey Curtis, love your show. I like Long Beach, but No Signboard certainly has its fans. Not many replies on the secret ingredient, but I believe it's the taucheo or fermented soybean paste. Much like miso, but it's the Chinese version and I think more robust in flavour (though I could be wrong!). If you want to try a variation on crab dishes, the Black Pepper Crab at Eng Seng Restaurant (at Joo Chiat Place, just off Still Road) always has long snaking queues that indicate it's a firm favourite locally. I like the chilli crab that is served in this small heartland reataurant called Chu Kee Cuisine. It's cooked in the traditional way with thick gravy and the fried man tou (fried buns). But they've updated with something that gives it a little sour touch which makes it really lovely. I'm not sure what it is but I like it a lot. The restaurant is located at Farrer Court (Blk 3 Queens Road #02-171).

Little Red House at East Coast. The sweetness of the sauce and the buns make this an excellent combination. I would give the House of Steamed Fish at Geylang a try as well if the boss there himself is doing the cooking.

Try the new restaurant Long Beach at Dempsy Hill. Environment and atmosphere is good for group dinning. There is not 1 best restaurant, it place has it's own special taste. You have to try a few to know your personal likings.

Most of the restaurants and stalls in Singapore serve delicious chili crabs...Basically, different people have different expectations and preferences when it comes to eating chili crabs, it is difficult to actually declare a winner. You need to taste and judge for yourself.

If you really want to eat the best chilli crabs, i suggest you head for the food stalls or hawker stalls near pongol, rather than some swanky hotel. Cause the best i have tested is at pongol, food centres or hawker stalls near the sea. You have to admit, when it comes to food like chilli crab or char kway teow, or any other local delicacies, the best is usually out in the open hawker food stalls and not in an elegant restaurant.

Taste is on individual preference. For me shop at Geylang Lorong 24 - No signboard Restaurant but a bit more expensive. Last I ate there a kilo costs $36 and the rest cost around $26 - $30. Also have choice between female or male crabs whereas shops at heartland mostly stocks male crab only. Another shop is one at Tampines St 11. Situated at the hawker centre but more famous for its butter crab version. They also add curry leaves which leaves a very nice aroma. Enjoy

Like everyone said, it depends on personal preferences. However.. I personally find chili crabs too sweet. When I was younger, I never remembered them so sweet. Now they remind me a bit of sin sin chili sauce - the sweet one. Since you cook... how bout you try something new. Try chili crab that packs more of a punch in terms of aroma and hotness.... and possibly less sweet. It'll be nice to try something different.... other than just the plain old sweet chili crab... =)

definately long beach down in east coast..i have been dining there since i was a kid.. there are two branches along the east coast.. if i m not worng an outdoor restaurant at the seafood centre and another indoor one near marine cove..lines can be terribly long but itis definately worth the wait..the pepper crab is alsoa must have..

Hi Curtis, I like this restaurant below. I am biased as I grew up around this area and don't really experiment much. Hence I can't tell what makes the dish so special compared to other places. If you chance upon this area, order the mantou (bread that has been deep fried). Its really nice with the gravy. On an overall 'crab' basis - It got to be "Seafood paradise" for me. Its located at defu lane , midst of all the industrial factories but amazingly crowded even on weekends. That speak for itself on how good it is! They just opened a second outlet at the Singapore flyer and quality yet to be tested (by me of cos!). I used to like Chilli crab, still like it but moved on to Black pepper crab - the aroma wakes my senses and u can taste the fresh crab meat better. Seafood paradise has their own butter crab which is equally sinful by soaking up the butter cream with fried buns. OMG... im calling to make a booking now! The ingredient that make this dish special Singapore-style (than other countries) - lemon grass leaves shrimp paste. I proposed we to do the taste test together when you are here! hehe....hey at least I tried gorgeous! "The satisfaction comes from the search for the best itself"

I love Gold coast seafood which used to be at UDMC. I love the juicy sauce which is a balance combination of sweet, sour and spicy. I have always had hard time stopping myself eating the sauce and deep fried bun. The important ingredient is of course the chilly!!! I took a cooking lesson from "at-sunrice, fort canning" years back and it was as good as gold coast seafood.

Hi Curtis, I' Amy Pheysey, Living In Singapore. I myself love Crab so much and for me i would like to suggest there is one Place call Uncle Leong seafood, located at a very Normal Food Court near ANG MO KIO where I've been eaten all most Chili Crab Restaurant i can say this one i had recommended is really not bad, well...so far i brought some friends with us and they compliments to this restaurant is really good. you could not only try cili crab, i insisted that you must try white pepper crab as well, vermicelli noodles crab and also other dishes...and not only nices Restaurant serve the best Crab and this Uncle Leong Seafood is Inexpensive at all...so enjoy and Bon Appetite.

I know one at Joo Chiat which serve good chilli crabs. There are always lots of people queuing up. To go there, you can travel along Still Road and then turn to Joo Chiat. It's at the junction. Easy to find. Open in the evening, around 5pm -6pm. You will see many people queueing up. The other one is at Ang Mo Kio. Some of them had already given the address of the Ang Mo Kio shop, so I needn't say anymore. Jumbo and Little Red House's standard are inconsistent. Sometimes good, sometimes bad. And prices are steep! I went to Jumbo recently, it was quite disappointing, the sauce was too starchy that it taste weird. Little Red House is not bad, except for the price. Little Red House and Jumbo are at East Coast. Very easy to find b'coz they are pretty famous. Hope I help you. As for ingredient, hmmm.... Chillies lor, so simple! For chilli crabs, of course it is the chilli. In the past, when I was younger, the version of chilli crab were spicer than now. The current version had change a bit, but it is still nice. Now they add tomato sauce to it. As for the chilli paste, there are lots of spices. So it is difficult to pinpoint which single ingredient make it special. Many restaurants use almost the same ingredients, but I guess its the amount of different spices that varies. Maybe the famous and good restaurants had got the balance of which ingredient to add more, and which one to add less when they are preparing their chilli paste. In addition, the crabs and the cooking time also make the difference. Cooking too long alter the quality of the crab meat. The crab meat will shrink and don't taste good, become watery too. Singapore chilli crabs use crab from Sri Lanka, mostly. The mud crabs, greenish black in colour. I think mud crab taste better when cook in chilli, compare to other types of crab. All these reasons make this dish special.

Paradise Restaurant located at Defu Lane 10 (it's in the middle of an industrial estate) There is another place at Still Road (??) not far from Marine Parade. Crabs are good but the stall owners have h*ll of an attitude. "No Signboard" Restaurant, there are quite a few locations. The ones in Geylang and at the Esplenade are pretty good.

After seven and a half years in Singapore, the best chili crab I've ever tasted was at my own apartment. A friend slaughtered twenty crabs for a 'crab party' and, after making his family's special sauce, I suggested adding extra butter and, of all things, orange juice. The reaction by our guests to this unique blend was extremely positive. When we sat down to eat, there was a long period of silence. The only sounds that could be heard from our usually very load guests were those of cracking shells, slurping and moans of pleasure. Even the fussy ones claimed it was the best they'd ever tasted. My favourite Chilli Crab is from Mellben Seafood at Block 232 Ang Mo Kio Avenue 3. The Crab Bee Hoon (crab with rice noodle in a milky broth) is fabulous too. I think the secret to cooking chilli crab is in the rempah, which should only be grind, painstakingly, using a mortar and pestle. :)

The best I have found is Hua Yu Wee, 462 Upper East Coast Road. Great Source for dipping - you can pick your own live crab. Kitchens are open for the public to see. Always a plus for me. Only problem is their deep fried buns (no pun) have reduced in size so you have to buy more to mop up that fantastic sauce! Their drunken prawns is pretty good as well. Not a tourist trap either. Well worth a trip out.

There are "two". #1 Family Choice - Red House at UDMC Friend, families, and my boss from US say this is the best #2 Businesss Choice - Jumbo Seafood at UDMC Local MD entertains only here Also nice side selection of Satay. I have eaten Chilli Crabs in many restaurants in Singapore and I can definitely say that Chilli Crabs served at No Signboard Restaurant is the best. The ingredients used to prepare the crabs are very fresh and I exceptionally feel the taste of prawns in the favouring. You should certainly try them at this restaurant and its value for money. Please also try the white pepper crabs as well.

I don't like the jumbo or long beach version of chilli crab. Think their sauce is too starchy at times. Prefer mellben, but would go to mellben toa payoh or pasir ris. This is because the branch at Ang Mo kio (original) is way too crowded and the quality can be inconsistent. Went there on several occasions and on 2-3 occasions the chilli crab were overcooked and had a burnt smell. On other occasions it was ok. So it is miss and hit for ang mo kio branch. A newspaper cutting ever rated the Chilli Crab at Toa Payoh to be better than its parent store in Ang Mo Kio.
